Gaudy pink raspberries cupcakes

Pink, a lovely colour that can easily brighten up my day and bring me a happy mood on such a rainy sunday morning in Aston. I make dozen pinky raspberries cupcakes and there is more than two sweet-tooth guys in the house love it.

To be honest, I've never trusted coloured food in Vietnam for many reasons: hygienic condition, chemical concern and I was taught not to eat artificial coloured cakes but its natural colours: brown and black as in chocolate.

''Mami, it not always work like that. At least, try my pink cupcakes for now as I made it for you. Happy mother's day, mami. I miss you.''

125g/4oz unsalted butter, softened
125g/4oz caster sugar
2 free-range eggs
125g/4oz self-raising flour
150g/5oz raspberries
6 passion fruit, sieved pulp only
a little milk, to loosen the mixture as necessary

For the icing
500g/1lb 1½oz icing sugar
160g/5½oz butter
1 vanilla pod, seeds only or 2 tsp vanilla extract
2-3 drops pink liquid food colouring
50ml/1¾oz milk

Preparation method
For the cakes, preheat the oven to 180C/350F/Gas 4. Sit 12 paper cases in a muffin tray.

Beat the butter and sugar in a bowl until pale and creamy. Add the eggs, one at a time, and beat until well combined. Fold the flour, raspberries and passion fruit pulp into the mixture until almost smooth. If the mixture looks too stiff, add a little milk, as necessary.

Divide the mixture among the paper cases then bake for 20 minutes. Remove from the oven and set aside to cool in the tin for 10 minutes. Turn the cakes out onto a wire rack and set aside until completely cooled.

For the icing, using an electric whisk, cream the icing sugar and butter together until light and fluffy. Whisk in the vanilla pod seeds (or vanilla extract) and food colouring. Gradually whisk in enough milk to form a smooth paste.

Spoon the icing into a piping bag with a large star-shaped nozzle and pipe the icing over the cake. Sprinkle over the hundreds and thousands or daisies.

Happy baking!

yellow and blue icing also look stunning. I love the way they match perfectly as lying next to each other. However, I warn you not to come close to this butter cream icing if you're on your strict diet cause it can be super sweet (ingredients: 1 cup softened butter, 1 cup icing sugar, 1 tsp vanilla, 1 tbsp milk if the icing is too thick.)

As my brother in law is in the house, I have the chance to show him my little blog. He likes it and places a big compliment on my fotos (it's a shame cause I don't really invest much time on photography after baking. I became a lazy worm seriously.)

Anyway, I've recently received many supports from my family and friends for what I'm doing here. Thank you guys so much and love you all.
