Carrot cupcakes with cream cheese frosting and carrots marzipan

These simple but yummy carrot cupcakes are the most enjoyable cakes I've ever made recently.
I have many leftover carrot in the fridge. I suddenly feel very interested in making marzipan. I miss the taste of cream cheese frosting melting in my mouth. Steph and many facebook friends of mine say yo for a carrot cake. Well I think that's fair enough to demand myself to bake a dozen carrot cupcakes.

After couple hours doing research on internet and watching the tutorial video on www.videojug.com, my very first baby carrot marzipan was born (finally). For those who is asking the question ''wth is marzipan?'' (like me ^^), I will try to share some knowledge that I have just learnt.

''There are proposed two lines for its origin: it is believed to have originated in Persia (present-day Iran) and to have been introduced to Europe. Other sources establish the origin of marzipan in China, from where the recipe moved on to the Middle East and then to Europe through Al-Andalus which describes parts of the Iberian Peninsula and Septimania.

Marzipan is a confection consisting primarily of sugar and almond meal. Some marzipan is flavored with rosewater. It is often made into sweets: common uses are marzipan-filled chocolate and small marzipan imitations of fruits and vegetables. It is also rolled into thin sheets and glazed for icing cakes, primarily birthday and wedding cakes and Christmas cakes. This use is particularly common in England, on large fruitcakes. Marzipan (or almond paste) may also be used as a cake ingredient. In some countries, it is shaped into small figures of animals as a traditional treat for New Year's Day.

In Italy, particularly in Palermo, marzipan (marzapane) is often shaped and painted with food colorings to resemble fruit.'' (credited by wikipedia)

And these lovely carrot cupcakes topped by cream cheese frosting and carrot marzipan luckily got their chance to be packed and travel from England to U.A.E

Hope their very first journey will be alright then.
