Tiramisu khuôn vuông - Công thức joy of baking

It has been 4 months since I moved to UK with my sweetheart Stephan. My life style totally changed. My diet is completely different. My eyes and my mind about the western world which I've only seen through television are definitely wide opened. There is a lot of thing for me to do here as a housewife: cooking, gardening, learning how to drive... and the most enjoyable thing is baking.

In order to celebrate my 4th UK month which is full of surprises, gifts, happiness and many more complicated emotions, I make a very tasty tiramisu.

Thế giới phương Tây mà trước kia chỉ được thấy qua báo đài, giờ đây hiện hữu trước mắt, mở rộng tầm nhìn và khái niệm của mình về một nước Anh lịch lãm. Cứ ngỡ sẽ buồn chán nhưng sự thật là 6 tháng làm ''vợ nhà'' của mình có khối việc thú vị: nào nấu ăn, làm vườn, học lái xe, ... và đặc biệt là làm bánh

Và để kỷ niệm tháng thứ 4 ở UK đầy ắp những sự bất ngờ, những món quà, niềm hạnh phúc và rất nhiều thứ cảm xúc lẫn lộn khó mà diễn tả, mình quyết định làm một ổ tiramisu ngon lành.


Tiramisu (pronounced "tih-ruh-mee-soo") is an Italian dessert. Literally translated Tiramisu means "pick me up" or "carry me up", which probably refers to the jolt you get after eating espresso and alcohol laced ladyfingers. It is often called an 'Italian Trifle" because, like any trifle, it has layers.



There is a lot of tiramisu recipes that is very easy to made and contains no raw eggs. The one I make today credited by joyofbaking, one of the source where most of my cakes taken from.

Ingredients

Cream Filling:

2 cups (480 ml) milk, divided
3/4 cup (150 grams) granulated white sugar, divided
1/4 cup (35 grams) all purpose flour
6 large egg yolks
1/4 cup (60 ml) Marsala or dark rum
2 teaspoons pure vanilla extract
1/4 cup (57 grams) unsalted butter, cut into small pieces
8 ounces (1 cup) (227 grams) mascarpone cheese

32 crisp ladyfingers

Coffee Soaking Syrup:

1 1/2 cups (360 ml) very strong brewed coffee or espresso
1/3 cup (65 grams) granulated white sugar
1/4 cup (60 ml) dark rum or Marsala

Topping:

Cocoa Powder for Garnishing

1 ounce (30 grams) semisweet or bittersweet chocolate, grated or chopped
Fresh Raspberries (optional)

Method

Cream Topping: In a medium sized saucepan heat 1 3/4 cups (420 ml) milk and 1/2 cup (100 grams) sugar just until boiling. Meanwhile, in a heatproof bowl, whisk together the remaining 1/4 cup (60 ml) milk, 1/4 cup (50 grams) sugar, flour, and egg yolks. When the milk comes to a boil, gradually whisk it into the egg yolk mixture. Transfer this mixture into another clean large saucepan and cook over medium heat, stirring constantly, until it comes to a boil. When it boils, continue to whisk the mixture constantly for another minute or so or until it thickens. Remove from heat and strain into a large bowl. Whisk in the Marsala (or rum), vanilla extract, and butter. Immediately cover the surface of the custard with plastic wrap to prevent a crust from forming. Refrigerate until cold, approximately two hours.

Once the custard has cooled sufficiently, remove from the refrigerator. In a separate bowl, with a wooden spoon, beat the mascarpone cheese until it is soft and smooth. Gently fold, or whisk, the mascarpone into the cold custard until smooth.

Coffee Soaking Syrup: In a large shallow bowl combine the coffee (espresso), sugar, and Marsala (rum). Taste and add more sugar if you like.

Have ready the ladyfingers, coffee mixture, and cream filling.

Working with one ladyfinger at a time, dip the ladyfingers one by one in the coffee mixture and place them side by side in a single layer over the bottom of the loaf pan. Spoon 1/3 of the cream filling over the ladyfingers, making sure they are completely covered. Sift cocoa powder over the top of first layer.
Repeat with another layer of ladyfingers by dipping the ladyfingers in the coffee mixture and placing them on top of the cream. Again, cover the ladyfingers with cream and repeat with another layer of ladyfingers, cream, and ladyfingers. Sift cocoa powder over the top of the Tiramisu. Refrigerate at least 6 hours, preferably overnight.

To Serve: Gently invert the Tiramisu from the loaf pan onto your serving plate. Sift cocoa powder over the top of the Tiramisu and decorate with grated white chocolate and fresh raspberries.

Makes 8 - 10 servings.

Palmiers - Còn có tên là Elephant ears

Palmiers! Delectable, melt-in-your-mouth pastries that are ideal for serving at breakfast or tea.

This lovely pastry is sometimes called palm tree because of its shape. For me, I'm unsure it got the either elephant ears or palm leaves. I don't really mind how it is named because I've just felt in love with this amazing but so-easy-to-make sweet. And because of this recipe, I decided to cancel my yoga class, put on my apron and bake.

I suggest this recipe for your lazy summer tea. You will enjoy it as much as I do. Guarantee!


Ingredients

150 g ready-made puff pastry, rolled thinly and cut into a square
100 g sugar
½ tsp cinnamon

Method

1. Mix the sugar and spice. Add the cinnamon to the sugar and mix them together.

2. Coat the pastry. Take the pastry and sprinkle the cinnamon sugar over the top. Then gently spread it out with your hands. Finally roll the rolling pin over the surface to press the sugar in completely. Turn the pastry over and do exactly the same thing on the other side.

3. Fold the pastry. Fold the longest sides of the pastry inwards by about 2cm, and flatten with the rolling pin. Fold both sides over once more, sprinkle again with cinnamon sugar and roll.

Lastly, fold the pastry up completely and roll the rolling pin over for the last time.

4. Slice the pastry. Cut the folded pastry into thin strips, making at least 20 individual palmiers. You can discard the untidy ends. Then turn them onto one side and place them on a tray.

Put the tray into the fridge and chill for 15 minutes.

5. Bake the palmiers. Remove the palmiers from the fridge and arrange them on a baking tray lined with greaseproof paper. Leave about 2 to 3cm between each one as they will expand and open up to form their 'palm like' shape. Don't leave too much space as they'll spread out too much. Then place the tray in the centre of the oven and bake for 15 minutes.

6. Take the palmiers out of the oven, and transfer them to a plate to cool down.


Serves:
makes 20 small palmiers

chocolate-filled Easter egg cookies

I've just known about Donna Hay website whilst trying to find some easy recipes for Easter holiday. I felt in love with her style of baking and food photography immediately. She has been cooking since 8 and currently the Australia's leading food editor and best selling cookbook author. Her food is simple, easy and beautiful.

Ingredients


- 65g cold butter, chopped
-  ¼ cup (40g) icing sugar
- ½ cup (75g) plain (all-purpose) flour
- 2½ teaspoons cornflour (cornstarch)
- 1 tablespoon cocoa powder
- 1¼ egg yolk
- melted white chocolate, to decorate
- chocolate filling
- 200g dark chocolate, chopped
- ½ cup (125ml) pouring (single) cream

Method

1. Preheat oven to 180ºC (355ºF). Process butter, icing sugar, flour, cornflour, cocoa and egg yolk in a food processor until a soft dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

2. Roll dough between non-stick baking paper to 3mm thick. Using an oval-shaped cookie cutter, cut out shapes from the pastry and place on baking trays lined with non-stick baking paper. Bake for 8–10 minutes or until the bases are lightly cooked. Cool on trays.

 3. To make the chocolate filling, place the chocolate and cream in a small saucepan over low heat and stir until melted and glossy. Refrigerate until cool. Spread half the biscuits with the filling, then sandwich with the remaining biscuits.

4. To decorate biscuits, drizzle with melted white chocolate.

Chocolate éclairs - home made pastry

Surfing all my favorite blogs, they're all talking about Easter. It's so in the air.  I am not a Christian yet but I am so eager to make something fun and delicious for Easter this year. Before that, may I share the recipe that I've learnt recently.

It's the Chocolate Éclairs!
It's a celebration of my 2 months baking experience!


Ingredients:


For the éclairs
- 150g unsalted butter
- 225ml water
- 225g plain flour, plus extra for dusting
- 6 free-range eggs
- pinch salt
- 300ml / a pint double cream

For the sauce
- 100g caster sugar
- 100ml water
- 50g dark chocolate, broken into pieces
- 25g butter

Method:


1. For the éclairs, place the butter and water into a pan and bring up to the boil. Once the butter has melted, take the pan off the heat and tip in all the flour. Beat well with a wooden spoon until the mixture comes away from the sides of the pan.

2. Beat in the eggs one at a time until completely incorporated. Stir in the salt.

3. Transfer the mixture to a piping bag and allow to cool for a few minutes. Preheat the oven to 200C/400F/Gas 6.

4. Pipe about 6-8 lengths of pastry onto a floured baking sheet. The pastry will at least double in size as it cooks, so give the éclairs plenty of space to expand on the baking sheet.

5. Transfer to the oven and bake the éclairs for about 30-40 minutes, or until golden-brown and firm.

6. Remove from the oven and allow to cool completely.

7. In a bowl, whip the cream until soft peaks form when the whisk is removed. Slice the éclairs in half lengthways and fill with cream.

8. For the sauce, place the sugar and water into a pan and heat gently until the sugar has dissolved. Bring to the boil and boil for 4-5 minutes, or until it thickens. Take the pan off the heat and leave to cool for five minutes.

9. Add the chocolate and butter to the pan and stir well until the chocolate has melted. Allow to cool, stirring occasionally. When the sauce has cooled and thickened, spread it on top of the éclairs and serve.

Rau muống xào thịt bò - Beef stir-fry with water spinach

When I lived in Vietnam, I ate Water Spinach (known as Rau muống) almost everyday. There are a lot of dish that you can prepare with Water Spinach either leaves or its stem:

- ''Rau muống luộc'' Simply boiled water spinach served with nuoc cham toi ot (Vietnamese fish or soya sauce with red chilli  and garlic which sweet, salted and spicy)
- ''Rau muống xào tỏi'' Simple and quick stir-fry either plain or with minced garlic is probably the most common.
- ''Gỏi rau muống bào'' thin strips julienned stems of water spinach with vinegar, dried prawn and fish sauce.

It is used as a garnish and side vegetable for many kinds of hot pot as well. Rau muống is absolutely a common, popular and healthy vegetable in Vietnamese and Asian cuisine.



For a plate of Beef stir-fry with water spinach for 2, you will need:

Ingredients


- 300gr water spinach, cut into finger-like strips
- 1 onion, cut into half of wedges size
 - 150gr beef strips or steak cut into thin strips
- 1 tbsp garlic, minced
- 1 tbsp olive oil
- 2 tbsp sun flower oil
- 1 tsp corn flour, mixed in 1 tbsp water
- salt, pepper or vegetable stock powder for seasoning

Method


1. Season the beef with half of miced garlic, olive oil, a little bit of salt, pepper and vegetable stock powder. Leave it chilled for 20 minutes.

2. Heat a large frying pan until smoking hot. Pour in the oil and swirl around the pan, then tip the onion and beef strips. Cook, stirring all the time until the meat is lightly brown, about 3 minutes, then pour over the corn flour liquid. Cook for more 1 min or until the corn flour liquid coats the meat. Set aside.

3. In the another frying plan which already heated and smoking hot, pour in the oil and the gralic has left, stirring around then tip the water spinach. Pour a little bit water, stirring well all the time. Season then cook for a little more or until the water spinach cooked but it still keeps the green colour.

4. Remove the heat, set the water spinach into a large plate, beef on top then finish with a bit of pepper. Serve with plain rice and sweet spicy soya sauce.

Lemon cake - Bánh chanh sốt phô mai chanh thơm mát

Sheffield is on a very sunny and beautiful day and that makes me want to bake a cake badly. I am thinking about Chocolate Eclairs, Hot Cross Buns and Lemon Cake. Somehow, I decided
 to go for Lemon Cake. A lovely cake to serve in the afternoon with a hot cup of tea.
 It is perhaps the colour of sunlight that poured down my window kitchen decides for me. 

Alez Lemon Cake! Super easy recipe for who loves Victoria sponge cake and lemon.


Ingredient:

- 1 cup (226 grams) unsalted butter, room temperature
- 1 cup (200 grams) granulated white sugar
- 4 large eggs
- 1 teaspoon pure vanilla extract
- Zest of 1 large lemon (outer yellow skin of lemon)
- 2 cups (260 grams) all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup (60 ml) fresh lemon juice

Lemon Filling

- 2 free-range egg yolks
- 75g caster sugar
- 50g unsalted butter
- 2 lemons, juice and zest
- 100g mascarpone

Method

1. Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven.  Butter, or spray with a nonstick spray, a 9 inch (23 cm) spring form pan and then line the bottom of the pan with parchment paper. 

2. In the bowl of your electric mixer (or with a hand mixer) beat the butter and sugar until light and fluffy and pale in color (about 3 minutes). Add the eggs, one at a time, mixing well after each addition. Beat in the vanilla extract and lemon zest.

3. Sift together the flour, baking powder and salt and then add to the batter along with the lemon juice. Mix only until incorporated. 

4. Pour the batter into the prepared pan, smoothing the top with an offset spatula. Bake about 40 - 45 minutes, or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool, then gently remove the sides of the pan.

5. For the filling, whisk the egg yolks and sugar together in a pan over a low to medium heat until the sugar has melted. Add the butter, lemon juice and zest, and continue to cook, whisking continuously, for 4-5 minutes, or until the mixture has thickened and is smooth and well combined. Set aside to cool completely. 

6. Using a metal spoon, carefully fold the mascarpone into the cooled lemon curd mixture to create a marbled effect.

7. When the sponge has cooled, cut the cake in half horizontally to create two thinner cakes. Spread the lemon filling all over the lower half of the cake, then place the top half. 

8.  Pour the icing sugar over the top of the cake, final touch with a slice of lemon.

Carrot cake - Bánh cà rốt hạt óc chó phủ kem phô mai

Chống cằm tư lự một hồi lâu:
- Bánh cà rốt!
- Hở?

Củ cà rốt mà đem làm bánh nghe có kỳ cục quá không? Chẳng hề tí ti nào nha. Thử phỏng vấn fan hâm mộ bánh trái xem có ai mà chưa thử qua và ưa thích loại bánh này không? Cắn một miếng để vị thanh ngọt của cà rốt nghiền lan tỏa cùng vị béo bùi giòn tan của hạt óc chó, thêm một lớp kem phô mai ngọt ngào tan chảy trong miệng.

Thể theo gợi ý của ''anh ấy'' bếp nhà mình hôm nay nướng bánh cà rốt.

Carrot cake recipe in English


Ingredients:

-  100 gr pecans or walnuts
- 340 gr raw carrots (about 2 1/2 cups finely grated)
- 260 gr all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsps baking powder
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 4 large eggs
- 300 gr granulated white sugar
- 240 ml safflower, vegetable or canola oil (or other flavorless oil)
- 2 tsps pure vanilla extract

Cream Cheese Frosting


- 57 gr unsalted butter, room temperature
- 227 gr cream cheese, room temperature
- 230 gr confectioners (powdered or icing) sugar, sifted
- 1 tsp pure vanilla extract
- 1 tsp finely grated lemon zest (outer yellow skin)

Method


1. Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven. Butter or spray two - 9 x 2 inch (23 x 5 cm) cake pans and line the bottoms of the pans with a circle of parchment paper.

2. Toast the pecans or walnuts for about 8 minutes or until lightly browned and fragrant. Let cool and then chop coarsely.
3. Peel and finely grate the carrots. Set aside.

4. In a separate bowl whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.

5. In bowl of electric mixer (or with a hand mixer), beat the eggs until frothy (about 1 minute). Gradually add the sugar and beat until the batter is thick and light colored (about 3 - 4 minutes). Add the oil in a steady stream and then beat in the vanilla extract. Add the flour mixture and beat just until incorporated. With a large rubber spatula fold in the grated carrots and chopped nuts. Evenly divide the batter between the two prepared pans and bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

6. Remove from oven and let cool on a wire rack. After about 5 -10 minutes invert the cakes onto the wire rack, remove the pans and parchment paper, and then cool completely before frosting.


Cream Cheese Frosting: In bowl of electric mixer (or with a hand mixer), beat the cream cheese and butter, on low speed, just until blended with no lumps. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth.  Beat in the vanilla extract, and lemon zest.


To assemble: place one cake layer, top side down, onto your serving plate. Spread with about one third of the frosting. Gently place the other cake, top of cake facing down, onto the frosting, and spread the rest of the frosting over the top and sides of the cake. If desired, press toasted and finely chopped nuts on the sides of the cake and decorate the top of the cake with marzipan carrots. Cover and refrigerate any leftovers.

Serves 10 - 12.

Muffins chuối dâu hòa hợp

Trời đã vào hè nên dâu tây bán đầy siêu thị với giá rẻ bằng một nửa so với mấy tháng trước. Thế mới hiểu sao sống ở nước ngoài, bà nội trợ nào cũng dán bảng ghi chú trên tủ lạnh ''mùa nào ăn thức ăn đó''.

Mình không phải fan bự của dâu tây nhưng đi chợ cứ mua hoài vì ''ống khói'' nhà mình thích ăn dâu.  Hôm nay mình làm bánh cốc nhân chuối dâu hòa hợp vì 3 lý do: bánh cốc vô cùng dễ làm, cả nhà chán ăn dâu suông và bếp còn 2 trái chuối chín rục.


Strawberry banana muffins recipe

- 1/2 cup (1 stick) (113 grams) unsalted butter, melted
- 3/4 cup (160 grams) light brown sugar
- 2 large eggs, lightly beaten
- 1 teaspoon (4 grams) pure vanilla extract
- 2 large ripe bananas, mashed (about 1 cup)
- 1 cup (240 ml) fresh strawberries (cut into bite sized pieces)
- 2 1/4 cups (295 grams) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon (4 grams) ground cinnamon
- 1/2 teaspoon (2.5 grams) salt

Method

1. Preheat oven to 350 degrees F (177 degrees C).  Position rack in center of oven.  Line a 12 cup muffin pan with paper liners or grease with butter or a vegetable spray. 

In a small saucepan melt the butter.  Set aside.

2. In a medium sized bowl whisk together the brown sugar, eggs, vanilla extract and mashed banana. Add the melted butter to the brown sugar mixture and stir to combine.   

3. In another large bowl combine the flour, baking powder, baking soda, cinnamon, and salt. Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking. Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or tough muffins will result. 

4. Divide the batter evenly among the 12 muffin cups, using two spoons or an ice cream scoop. Place in the oven and bake until a tester inserted in the center of a muffin comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool.

Makes 12 regular sized muffins.

Pancake rưới mật ong

Vẫn là thích tự mình làm pancake hơn là mua bột bán sẵn ngoài siêu thị, mang về chỉ cần pha nước vào là xong. Sáng nào mà ngán trứng ốp la, xúc xích, bacon thì pancake là sự lựa chọn ngọt ngào và mịn màng. 



Nguyên liệu

- 130gr bột mì (all-purpose flour)
- 2 tsp baking powder
- 1/4 tsp muối
- 2 tbsp (28 grams) đường kính 
- 1 quả trứng 
- 1 cup (240 ml) sữa
- 2 tbsp (28 grams) unsalted butter, làm chảy
- Chút bơ tráng chảo

Cách làm

1. Trong một tô trộn to, trộn đều bột  mì, baking powder, muối, đường. Trong tô thứ hai, khuấy đều trứng, bơ, sữa với nhau sau đó đổ hỗn hợp trứng vào hỗn hợp bột dùng whisk trộn vừa phải. Không lâu, không quá tay làm chai bột.

2. Chảo nóng, dùng cọ thoa một ít bơ vào chảo. Nếu dùng một cái chảo to thì dùng muỗng múc kem, cho từng lượng bột vào chảo nóng, mỗi chiếc cách nhau vào xăng ti mét. Chừng 2 phút trở mặt bánh cho đến khi hai mặt có màu nâu vàng. Cách này sẽ đổ được 8 chiếc bánh 7cm. Nếu dùng loại chảo chiên 1 trứng không dính, có thể tráng được 4 chiếc 12 - 14cm

3. Dùng nóng với marble syrup, mật ong, sốt chocolate hoặc đường và chanh tùy thích

Khoai tây nướng cay

Nguyên ngày nay, laptop giở chứng không nhận con chuột. Điên cái đầu! Code 43 là cái quỉ khỉ ho cò gáy gì đáng ghét thế không biết. Phải thú thiệt là mình trước giờ quê mùa, chẳng bao giờ xài chuột bàn phím, loay hoay mất mấy tiếng mới chỉnh xong giao diện mới cho blog. Trắng sáng như Tide và hồng hào như Pond's ;D

Bỗng vui và thèm wedges.

Potato wedges mình tạm dịch là khoai tây chiên để vỏ. Ít ai biết cậu này cũng thuộc họ ''French fried'' Chỉ là một biến tấu mang dáng hình và gia vị khác tí thôi. Bản chất khoai vẫn là khoai. Ít ai biết bé khoai này còn có cái tên rất xinh gái là ''jojos'' Mình thích cái tên này.

Thích ăn cay nên công thức này mình làm với ớt khô xay. Một số người dùng rosemary, số khác thích mix herbs, có người lại chẳng cho gì vào ngoài muối và tiêu. Món ăn này dễ tính đến nỗi có thể dùng với hầu hết các loại sốt: ketchup, brown sauce, sweet chilli sauce, tar tar, sour cream, mayonnaise, gravy, barbecue sauce,... Giờ thì vào bếp làm thử nha.

Nguyên liệu


- Khoai tây loại to, 4 củ
- Bơ nấu ăn, 2 muỗng canh to
- Tỏi băm, 2 tép
- Dầu olive, 1 muỗng canh
- Gia vị: muối, tiêu, ớt khô xay (nêm nếm tùy theo khẩu vị)

Cách làm


1. Làm nóng lò nướng trước (200C / maximum tùy ý). Bơ nấu ăn cho vào microwave hoặc chảo đun chảy, cho dầu olive, toàn bộ gia vị vào một cái tô / thau to. Trộn đều.

2. Khoai tây rửa sạch, để vỏ cắt góc tư. Thấm cho ráo nước, cho vào tô gia vị trộn đều. Cho khoai ''ngâm mình'' chừng 15 - 20 phút sau, sắp khoai ra khay nướng, cho vào lò. Nướng từ 25 - 30' hoặc đến khi thấy mình khoai vàng và chín đều.

3. Dùng nóng sau khi lấy ra khỏi lò nướng.

Potato Wedges làm vô cùng dễ mà ăn thì ngon tuyệt cú mèo. Không như wedges mua ngoài siêu thị, mình bảo đảm home-made wedges tươi và mềm mại hơn nhiều. Chấm một miếng khoai nóng hổi vào Reggae reggae sauce cho vào miệng. Ùm! Ghiền!

Parmesan Spring Chicken

Thế là tháng 4. Mùa xuân chẳng mấy chốc đã đi qua nhường chỗ cho ánh nắng chói chang của mùa hạ nước Anh đang đến gần. Sáng thức dậy, mở toang cửa sổ và cảm nhận cái nóng nhẹ của mùa hè chảy tràn. Trời trong xanh quá, chim thì hót líu lo, mình tự nghĩ phải làm cái gì đó hay hay, ngon ngon cho bữa trưa này.

Thế là mở tủ lạnh mới biết nhà chẳng còn nhiều đồ ngoài hai cái ức gà đông lạnh, đậu peas cũng đông lạnh và vài cọng rau pi-na. Vừa hay đủ nguyên liệu để làm món ''Chú gà mùa xuân''. Thật ra, tên của món ăn này là Parmesan spring chicken ^^. Giờ mình làm thử nha...

Nguyên liệu


- Ức gà không da không xương, 2 cái
- Lòng trắng trứng, 1 quả
- Cheese Parmesan cà mịn, 3 muỗng canh to / đủ dùng phủ đều 2 chiếc ức
- Khoai tây gọt vỏ cắt hạt lựu to, khoãng 200gr - 300gr tùy thích
- Đậu peas, 100gr
- Chừng 1 nắm tay đầy rau spinach
- Dấm rượu trắng, 1 muỗng canh to
- Dầu extra olive, 1 muỗng canh to

Cách làm


1. Làm nóng lò nướng. Ức gà rã đông, ướp gia vị muối, tiêu chừng 20'. Cho một ít tiêu và muối và lòng trắng trứng, đánh lên. Đổ cheese Parmesan ra đĩa. Lăn từng chiếc ức gà lần lượt qua lòng trắng trứng rồi đến cheese. Nướng gà từ 10 -15 phút đến khi hai mặt vàng đều.
2. Trong lúc đó, luộc khoai tây khoãng 13 phút, cho đậu peas vào luộc ở 3 phút cuối (không cần rã đông). Khoai và đậu chín vừa, không quá mềm, đổ ra để khô. Cho tất tần tật đậu, khoai tây, rau spinach, dấm, dầu olive vào một cái thau inox sạch, gia vị và trộn đều.
3. Chia đều rau ra 2 dĩa, gà để lên trên.

Sở dĩ món nào mình cũng làm với ức gà vì husbie mình không thích ăn cánh, đùi hay bất cứ phần nào của con gà có da và xương. ( hix trong khi mình thì toàn thích gặm xương và nhai da gà!). Mình nghĩ món này rất dễ làm và dùng cánh hay hay đùi đều thú vị, miễn là nướng cho thịt chín hẳn, không còn máu bên trong gần xương gà là ok.

Mình thích ăn nhiều rau nên thỉnh thoảng cho thêm một ít cà rốt, bắp ngọt và măng tây vào. Thêm vitamin, thêm màu sắc nhìn rất hấp dẫn.

Lan bé trong vườn

Hôm nay Anh vắng nhà. Một mình loanh hoanh trong vườn thì thấy đám nụ lấm tấm hôm trước hôm nay đã nở bung mang một màu trắng dịu dàng cho khu vườn đầy những sắc màu chói chang của daffodils, buttercups, puppies, pansies, ...   


Trông dáng hình thì giống Lan tấm nhưng kích cỡ của nàng thì quá chi là mi nhon để là một nhánh lan kiều diễm. Hoa nở bung chỉ dài gần 2 xăng ti mét thôi.


Nhìn gần thật gần, những vẩy mực tim tim loang lỗ trên cánh hoa như thể cậu học trò lém lỉnh bàn sau nghịch ngợm chiếc bút máy của mình, vô tình làm vấy chiếc áo trắng tinh tươm của cô bạn ngồi bàn trước. Cô ấy khóc òa và chạy về mách mẹ.   

Thiệt dễ thương quá sức!




Trong ánh nắng trưa nhàn nhạt, hoa dịu dàng nép mình vào nhau 



Hoa bé tí ti chỉ bằng một ô trên bàn phím mini của mình.

Bánh gateaux chocolate - Bánh sinh nhật phủ kem bơ dâu tươi

Trước giờ, mỗi lần gia đình hay bạn bè có sinh nhật đều chạy vù ra Kinh Đô, Đức Phát chọn một chiếc bánh, kêu người ta ghi dùm câu chúc, trả tiền và mang về nhà. Đơn giản hết sức! Năm nay mình quyết định tự làm một chiếc bánh sinh nhật tặng Anh bù lại mấy năm toàn chúc nhau qua điện thoại và nhận quà chuyển phát qua đường bưu điện.

Thấy hạnh phúc một cách khác.


Buồn cười một cái là làm bánh xong phải giấu giấu giếm giếm không cho ''giám đốc'' thấy, để dành đến tối thổi nến, ước một điều ước và hát bài hát chúc mừng sinh nhật.


Vừa ních căng bụng ở pub nhưng bụng vẫn còn nhiều chỗ trống cho một góc bánh to thật to. Ơi, không khéo thì cái vòng eo tăng thêm vài xăng ti mét, mai mình lại phải chạy bộ cật lực ở phòng Gym nữa rồi.

Tart cà chua

Lần đầu tiên mình làm tart.

Công thức vẫn là tìm trên google, tham khảo cách làm trên youtube và có sẵn một ''thực khách'' quen thuộc luôn hạnh phúc nếm những món ăn mới. Dù nó có chút vị khác lạ do biến tấu và thiếu hoặc nguyên vật liệu không chính xác 100%, thành phẩm ra lò vẫn rất bắt mắt. Ngon lành theo lời nhận xét của ''thực khách'' hihi  

Nguyên liệu

- Cà chua cắt lát, 5 quả
- Dầu olive, 2 muỗng canh
- Bột bánh xốp, đã nhồi, 500gr
- Cheese Parmesan, cà nhuyễn, 50gr
- Cheese Cheddar, 50gr
- Bacon, loại dày nhiều nạc, 4 miếng
- Rosemary
- Muối, tiêu

Cách làm

1. Chỉnh nhiệt độ lò nướng ở 190C, chuẩn bị trước một khuôn bánh tart, rắc ít bột vào khuôn. Bột bánh sau khi đã nhồi, cán mỏng với độ dày chừng 1cm, cho vào khuôn. Có thể dùng nĩa xăm để bánh mau chín. Dùng phương pháp ''blind baking'' (nướng vỏ bánh trước chừng 10 phút) phủ một lớp giấy bạc lên trên lớp bột, trên giấy bạc rải chừng 2 nắm tay đậu khô (bất cứ loại đậu nào), cho vào lò nướng từ 10 -12 phút

2. Trong lúc đó, bacon chiên vừa chín, thấm bớt mỡ, cắt khúc vuông. Cà chua xắt lát, cho ra một chiếc dĩa to có trải khăn chuyên dùng cho nhà bếp, gia vị bằng một ít muối. Phủ khăn giấy lại cho cà chua mất nước.

3. Vỏ bánh sau khi lấy ra khỏi lò sẽ có màu vàng nhẹ trên mặt và mép bánh. Lần lượt xếp cà chua đều khắp. Sau đến bacon, rosemary, tiêu đen, phủ đều cheese cheddar và cheese parmesan đã cà nhuyễn lên toàn bộ bề mặt bánh. Sau cùng là rưới dầu olive lên. 

4. Cho vào lò nướng. Nướng từ 10 - 15 phút hoặc đến khi thấy lớp cheese chảy và cà chua đã mềm ra thì tắt lò. Lấy bánh ra khỏi khuôn. Rắc một ít lá thơm lên mặt trang trí nếu thích.

Nhìn vào cách làm thì trông có vẻ rườm rà nhưng thật sự rất đơn giản. Công đoạn gay go nhất chắc là phần làm bột và cán bánh. Lớp vỏ bột này có thể dễ dàng mua ở bất cứ siêu thị nào nhưng tự mình nhào nhào nặn nặn vẫn là thích hơn. Cảm giác như mình là một thợ bánh thực thụ vậy. (Nhưng còn lâu ơi là lâu mới được làm thợ bánh như chị Rùa idol ^^)

Lại một ngày nữa, ảm đạm và ủ rũ nhưng mình không vì thế mà đánh mất đi niềm tin và cá tính của mình. Trái đất vẫn quay, mặt trời vẫn mọc và ''thiếu gia'' vẫn phải ăn mỗi ngày. Chừng đó thôi cũng thêm chút quyết tâm để vào bếp và làm tốt vai trò của một người vợ trẻ.

Raisin Cookies

Mấy hôm nay trời tắt nắng và trở lạnh. Mặt trời trốn đi đâu chẳng thấy ló dạng để những đám mây xám và lũ gió nghịch ngợm quấy phá khắp ngõ ngách của khu phố nhỏ. Tâm trạng vì thế cũng u uất. Đi ra đi vào chỉ thấy đám chim đen mỏ vàng nhảy chân ba trên hàng rào. Cúc cu cũng đi du lịch nơi đâu rồi. Vắng cúc cu, buổi sáng thức dậy thấy tai mình thiêu thiếu chút gì đó.

Mình đang thiếu âm thanh của cuộc sống, thiếu một chút sự tôn trọng mà mình đáng được nhận. Chỉ một biến cố thôi cũng khiến một tâm hồn đang vui vẻ, sẫm màu và buồn bã. Lúc thế này, chỉ muốn đi nướng cookies. 2 phút trộn bơ, trứng, đường, 3 phút trộn bột, nho khô, 10 phút cho vào lò thế là được một mẻ bánh quy nhân nho khô vô tư.

Chỉ có những chiếc bánh quy nhân nho khô là hiền lành, không bao giờ đưa ra một lời đánh giá nào làm tổn thương người khác.


Nguyên liệu

- 260gr bột mì (all purpose flour)
- 200gr đường nâu
- 170gr bơ lạt
- 1/4 tsp muối
- 1/2 tsp bột quế
- 2 tsp bột nổi
- 1 quả trứng to
- 1/4 cốc sữa (60ml)
- 1 tsp hương vani
- 125gr nho khô đen

Cách làm

1. Chỉnh nhiệt độ lò nướng ở 190C, lót giấy nướng hoặc phun dung dịch nướng bánh vào 2 khuôn dùng nướng cookie. 

2. Tô thứ nhất: dùng whisk trộn đều hỗn hợp bột mì, muối, bột quế, bột nổi riêng một tô. Ở tô thứ hai: đánh hỗn hợp bơ, đường, vani, trứng, sữa chừng 2 phút. Trộn hai hỗn hợp vào nhau, cho nho khô vào, trộn đều đến khi cảm thấy nho lẫn vào bột.

3. Múc từng muỗng nhỏ hỗn hợp cho vào khuôn bánh. Từng chiếc cách nhau 4 - 5 cm để khi nở bánh không dính vào nhau. Cho vào lò nướng từ 8 - 10 phút hoặc đến khi thấy mặt bánh chuyển màu nâu nhạt. Dùng xúc nhựa lấy bánh ra khỏi khuôn, để nguội trên rãnh. 

Khi bánh nguội hẳn có thể cho vào hũ / túi ni lông.
